Heat things up!
In a saucepan, warm the fat over medium-low heat. Once it’s shimmering with excitement, add the flour and stir like a pro. Cook for about 2 minutes, stirring like there’s no tomorrow. (This is your roux—fancy, right?)
Spice it up!
Toss in the red chile powder and give it a quick stir (no longer than 30 seconds, or it might get cranky and burn!). It’ll look clumpy, but that’s okay!
Whisk away!
Gradually add your liquid while whisking like a champion to smooth out those clumps. Keep at it until you have a silky sauce!
Mix it up!
Add all the other ingredients (but hold off on the sugar for now) and let it simmer for about 15 minutes. Stir frequently, and if it gets too thick, just splash in a bit more liquid—1 tbsp. at a time—until you reach your desired consistency.
Taste test!
Give it a little taste. If it’s a bit too hot or bitter, sprinkle in a tiny bit of sugar to balance the flavors.
Let it rest!
For the best results, let your sauce cool, then pop it in the fridge overnight. This will enhance the flavor and create that smooth texture we all love!
Kitchen Notes
Extra Flavor:
Want to keep it smooth? Stick with garlic and onion powders, or go wild and sauté minced garlic and onion in the oil before adding the flour for extra flavor!
Sweeten It Up:
If your sauce leans toward bitterness, don’t be shy—just add a pinch of sugar at the end. Always taste before adjusting so you get it just right!
